Scapes are the shoot that develops out of the garlic plant. We harvest these in mid-June and either eat them fresh or pickle them!

If we were to leave them on the plant they would cause the plant to put energy into flowering rather than growing a larger bulb. And thats the excat opposite of what we want as food producers and consumers. :)
